Guillaume received his agricultural technician's diploma with a laboratory option and joined INRAE in 2006 as a technical assistant at the Versailles-Grignon centre. For 15 years, he participated in the study of the characterisation of secondary metabolism in Botrytis cinerea, a necrotrophic fungus responsible for grey rot in more than 200 plant species. His main activities were the inactivation of candidate genes in Botrytis with skills in molecular biology, microbiology and microscopy.

After a mobility, he joined the BIOEPAR unit and the PEP'S team in June 2020 to work on parasitism in cattle.
